Hooked on fish and seafood? Many of us are afraid to attempt seafood dishes, lacking the knowledge to select, fillet, prepare and cook them – let alone to attempt fabulous fish dishes for family and friends! This ‘fishy’ cookery at Waitrose course tackles all of these aspects, teaching key skills and giving you the confidence to create some fantastic dishes including crispy Asian sea bass, succulent scallops with chorizo and butter beans and a French classic… What ‘cod’ it be?

Looking at a selection of fish and shellfish we’ll help you to identify species and recognise the freshest fish so you leave confident to select it for yourself….In the morning, you will learn how to fillet both flat and round fish, prepare shellfish and cook with different methods.”
